Usually, red wine comes along with the cheeseboard but it doesn’t always make the perfect match. White wines are better with most of the cheeses, such as goat and blue cheeses.

Salad of marinated goat's cheese
with provence herbs

Ingredients (serves 4) :

  • 1 log peppered goat’s cheese
  • olive oil
  • Balsamic vinegar
  • Thyme, rosemary and bay leaf
  • 1 red pepper and 1 green pepper -4 good handfuls of rocket leaves
  • Around 20 cherry tomatoes
  • 1 cucumber
  • 2 chicken breasts
  • Some olives

Preparation :

  1. Beforehand : cut the goat’s cheese log into 4 slices. Place them in an airtight jar. Add herbs and peppers and cover with olive oil. Close the jar and allow to marinate for a day to a week.
  2. Cut the cherry tomatoes into 4. Wash the cucumber and cut into thin slices.
  3. In a bowl, add a tablespoon of vinegar and mix with a pinch of salt.
    Remove the goat’s cheese from the jar and drain. Collect 3 tablespoons of the marinade and mix with the vinegar.
  4. Cut the chicken into pieces of about 3 cm.
    Put some fat in a hot pan and cook the chicken over medium heat for about 3 minutes on each side.
    Season and put the pieces on a plate and cover with tin foil.
    Leave to cool down.
  5. On four plates, arrange the rocket, tomatoes, cucumber, olives and marinated goat’s cheese.. Drizzle with the dressing and then add the pieces of warm chicken.

++The chicken breasts can also be grilled on the barbecue, and then cut after cooking.
